Time to Shed OFF and FILL Up.

The snow is long gone, now, and it’s time to shed the sweat pants, the heavy coats, the cover-ups… and we may start to also want to shed a few unhealthy thoughts about our health habits and body image with them!

Ugh… ever catch yourself meditating on things NOT so gracious in regards to your health and body… or even personality and habits?
Ever tried to STOP in that moment and turn it AROUND … ? 


Here is how we do it:

We put on, switch our focus, or, in other words, we FILL OUR MINDS with the positive, true, forgiving and  BEST thoughts about ourselves, our intentions,  and what we managed to get RIGHT, despite our imperfect selves.

Sure. We still missed the mark on so many things last week (and the week before that).  Heck – we messed up just this morning somehow, I guarantee it!  But we don’t have to allow every thought and feeling and subsequent action fall captive to that one diminishing thought or “bad” habit.

We can CHOOSE  to kick that thought to the curb, and squash it out – drown it, flood it, push back at it- with the loving thoughts of our God, Who created us as wonderful, beautiful, “MORE than conquerors” beings, in HIS image.

Decide right now to put in your mind the thoughts that are noble, just, gracious, true, beautiful, compelling, reputable, AUTHENTIC (that one is my favorite, I think).

Whoo!!!  Our minds are so powerful.  Which direction are your thoughts taking you this morning?

GOING GREEK – The brands I choose for most Protein


Greek yogurt is one of the PROTEIN sources I love to fit into my day (;)I am not always in the mood for fish and meat)!

Several of you have asked me my faves or the ones I gravitate towards when shopping for myself. 

Here are my top two picks: 

1.  My current FAVORITE is Fage PLAIN for its texture and creaminess – oh, so smooth and less punch than some other brands.

2.  Chobani PLAIN was my very first greek yogurt find when I started researching one that would agree with my palette.  I’ll still pick up Chobani when Fage isn’t on the shelf.

…and for a couple of reasons: 

1) I choose PLAIN for no added sugars – to sweeten I use fruit juice (squeezed fresh), raw honey, or 100% pure maple syrup. I also use it plain as a sour cream substitute 🙂 on my chili, potatoes, salads, tacos, dips. 

2) Greek yogurt itself is higher in protein than regular yogurt…. but I choose these two brands in particular because I find they pack at or above 20g of protein per serving –  KACHOW!  LOL seriously, I do prefer higher protein to sugar/carb content 🙂 and there are a couple of brands out there that, although they may be sweeter or smoother, they seemed to also have way less protein or way more carbs than I wanted 😉

So, that’s it!  That’s pretty much my strategy – simple, right?

21 DAY FIX MEAL PREP – How this girl does it!

What does 5 days worth of meal prep on 21 Day Fix look like (with grocery list included)?  { Recently  posted in the Beachbodyblog and featured on 21 Day Fix fb page}

When I saw this grocery list, I knew I had to share it with y’all!  Amanda, on her blog Running Wild and also on Instagram, currently follows the 1,800–2,099 calorie bracket for the 21 Day Fix in order to maintain her weight, and preps 5 meals for the week each Monday.  She does it to save herself time later in the week.

While I personally also aim to prep 5-6 days worth of protein and veggies, I tend to keep my precooked food in bulk containers in my fridge, for me to grab and put together on my plate when it is time to eat, or pack individual containers to go throughout my week for work or days on the road.  Amanda takes it a step further and portions out her individual meals ahead of time, as seen below.

Here’s pretty much what one day looks like.  As you read her daily eats below, you’ll notice a few foods not shown in the pic are also included – yes, that means even more food than what is shown is actually able to be eaten!  Lol. Do you hear angels singing?  Anytime there’s more food included, that’s great news in my book, and it’s one of the reasons why I love the Fix way of eating.  Because you don’t feel deprived!


Here is her grocery list for the week’s worth of prep:

Breakfast: Shakeology with a banana, flax seeds, and 3 tsp. almond butter (1 red, 2 purple, 1 orange, 3 tsp.)

Snack: Two egg muffins (every 3 is equal to about 1 egg, 4 egg whites, with spinach, & red bell peppers) & oatmeal (not shown) (1 red, 1 green, & 1 yellow)

Lunch (Mon/Wed/Fri): Chicken, sweet potato, and broccoli (1 red, 2  yellow, & 1 green)

Lunch (Tue/Thur) – seen above: Tempeh, sweet potato, and broccoli (1 red, 2  yellow, & 1 green)

Snack: Trout with 1 tsp. olive oil, asparagus, and a small apple (1 red, 1 green, 1 purple, & 1 tsp.)

Dinner (Mon/Wed/Fri): Cooked shrimp,  bell peppers, & mushrooms sautéed in 1 tsp olive oil, edamame, and ¼ an avocado (1 red, 2 greens, 1 yellow, 1 blue, & 1 tsp.)

Dinner (Tue/Thur) – seen above: Ground turkey, kidney beans, bell peppers, & mushrooms sautéed in 1 tsp olive oil, and ¼ an avocado (not shown) (1 red, 2 greens, 1 yellow, 1 blue, & 1 tsp.)

Grocery List

• 1 pound shrimp
• 1 pound chicken
• .75 pounds turkey
• 1 container tempeh
• 1.75–2 pounds trout
• 5 large sweet potatoes
• 1.5 cups edamame
• 5 bananas
• 5 apples
• 5 cups broccoli
• 50 large asparagus spears
• 4 cups mushrooms
• 5 red bell peppers
• 4 yellow bell peppers
• 2 avocados
• 1 10-oz bag spinach
• 5 packets Shakeology
• 1 can kidney beans
• Olive oil
• Flax seeds
• Almond butter

Cherry Bomb Cocoa Delight

It’s creamy deliciousness when you combine your Vanilla and Chocolate Shakeology scoops together with frozen cherries and a bit of banana!


The bomb-diggity right here LOL. :roll:😜 layer into blender:

1c. Ice
1/2c. Water
1/2 scoop vanilla shakeology
1/2 scoop chocolate shakeology
1/2 c. frozen unsweetened cherries
1/4 large banana or 1/2 small
1/2.c almond milk unsweetened

Blend on low for 30 seconds, blend on “liquefy” for 30 seconds… when creamy and smooth, pour into cup and enjoy!  Mmmmm! 

21DF & DFX Approved Lunch: BEEF / TURKEY WRAPS

Lunch today was one of my favorites!  Went with lean beef because the store was completely out of ground turkey this week, but my first week on 21dfx I had it with the turkey, and it was DELICIOUS!!

Dare I say it tasted even better with the ground turkey vs the beef *gasp* no way?!  Lol.

It really is a quick and delightful dish, especially if you love Mexican flavors like I do!

It also makes for a quick and versatile meal prep at the beginning of week.  Cook down your ground meat and veggies (I’m a lazy cook, so all my veggies are chopped chunky), refrigerate in a large Tupperware container, and then use your 21dfx portion control containers to portion out what you need per meal.  Spoon on romaine leaves, toss in a salad, eat alone.  If you’re following 21dfx C2C plan, you know you need all the red+green meals you can get your hands on in a short amount of time throughout the day, so this one is ideal for me.

And on your “normal” 21df days, feel free to spoon mixture on a whole grain wrap or make into a chili by adding black beans, roasted tomatoes, and extra seasonings.  So good!

Here’s my version, pretty darn close to the original found inside your 21dfx eating plan book.

I squeezed a lime and dropped some fresh cilantro leaves over top for added YUM!  Both “freebies” in the 21df/21dfx eating plans.



21DF Approved Breakfast: Egg Whites & Asparagus


Opted for a QUICK Breakfast for lunch while embracing a whole new mindset and practice (for me, anyway)… meal prep!  But, more about that later…

Before I show you my eggs, let me just say that this Southern girl was raised on the WHOLE EGG and the yolk was, for me, ALWAYS the best part, Right?!! Can I get an amen?!  Lol.  I mean, summers with my grandma were fried eggs (with sausage and grits, of course).  The eggs were served to us (I have three younger brothers) mashed all up in our plate with the yolk all thick and creamy, and topped properly with  salt and pepper.  THE.  BEST.  THING.  EVER.

SO, fast forward a few years decades, and here I am, trying to eat “healthier” and try new ways of eating things, especially to get more protein in my daily diet…. and all this talk about egg whites shows up.  And I am SO RRSISTANT to it.  Won’t do it.  Adamant, even.  Foot firmly planted….


One morning (today), I decide to give it a try.  Mainly because I wanted some variety from the hard boiled eggs I’ve been eating so much of lately, but also just to try something I never have.  A personal challenge. Yes, that’s it.  And so, I did….


I put RED PEPPER (cayenne) on top, just to be sure they wouldn’t be bland (this was one of my “reasons” for never eating them) – how funny does that sound!?  Lol.

Ever so hesistantly, I took a bite… I also thought FOR SURE IT WOULD BE THE GROSSEST THING I’VE EVER FELT (texture wise) in my mouth LOL.


And in it went!  No turning back. .. I prepared for the worst and sort of curled my tongue to resist it at first HA!!

BUT Y’ALL, guess what?


Yep, I LOVED IT!  I really did!

So, here’s the deal:  DON’T DREAD THING… It’s 10x worse than actually just trying it and finding out for sure,  because FIRST OF ALL… you might be wrong (duh)!

But SECOND OF ALL ( and here’s my point)… when you rehearse it over and over in your mind the WORST thought you have about NOT WANTING TO do something. .. in  actuality you are EMOTIONALLY and MENTALLY living it many times over… with actual PHYSICAL reactions, most often times… as if you really did suffer through the experience already!  HOW DREADFUL,  RIGHT?  I mean, right now I’m just talking about eggs, but what about …


You get my drift?

So, instead of dreading a thing and procrastinating and just giving yourself a complex over doing it or NOT doing something, …

Just DO IT already, and see…

You may just like them, indeed!  And it could very well bring you into a new level of awesomeness.

Anyway, here’s breakfast… wait!  I MEAN LUNCH!


Using my 21 Day Fix containers, this meal would be:  1 green (asparagus with lemon zest and Himalayan salt) + 1 red (egg whites with red pepper and Himalayan salt)

So, what do you think?  Egg whites only, or the whole egg?  What’s ONE THING you’re willing to try or one thing you’ve been procrastinating on today… that you could just GET IT OVER WITH already and DO IT?!

21 Day Fix Extreme – Day 13 – My Progress

I want to preface this post by saying YOU DO NOT have to do an extreme program to drop a dress size.  I dropped a full dress size the first time I did the original 21 day fix.  Okay, onward to today’s post…

I was able to complete more of these half moon curtsy lunges than last week, and I’m still modifying on renegade rows with pushup.  But definitely feeling stronger, more endurance.

Looser pants!  Whoop!  I started 21dfx with a goal to reach a size 6, y’all… never been a 6 as an adult, so I’m aiming for new territory I’ve never been in.  Ready to take that leap of faith!  Gonna work it til I reach it!

The way you work

Ever catch yourself stressing out over the unknown details of the future?  How’s it gonna happen?  When is it gonna all come together?  What do I need to do and what if I’m missing it right now? 

I was reassured in today’s snow when this verse came to mind, that I don’t have to know all the detailed answers to those questions.  The one thing I do need to know is He is faithful.  And so, He’s got me.   

As we rely on and trust in and continue to take our daily steps  (both small and grand) full of faith in His Ways… so does He promise that He produces, the resources and the provisions, making things grow…to completion.
