Present Over Perfect for Summer

With the temps rising in Texas… I can definitely say summer is totally here! ☀️

Are you loving it, or feeling more nervous about shorts, swimsuits, tank tops? I’ve been there!

I’ve overheard so many people recently who aren’t too enthused because they feel they don’t have a ‘summer-ready’ body or that they aren’t ready for the food-focused events and summer trips wrecking their nutrition habits, and unpredictable schedules or activities breaking their gym/workout routine.

And honestly… it’s that kind of talk that gets me concerned. 😢

Summer is meant to be lived fully and enjoyed without worry!

Even if things are a bit crazy and schedules are tough, you can embrace the busy moments and make the most of your time. Even if there is a lot more junk food around, you can enjoy it in balance.

It is totally possible to fully embrace the season if we can do just ONE thing…

We can focus on being present over perfect.

This doesn’t just apply to summer, but to any season! Striving to be perfect or do things perfectly – like follow a diet perfectly or have the perfect schedule, perfect Pinterest summer and perfect body – it’s robbing you of the joy in the present moment! Perfection is a lie. Don’t fall for it.

Mamas, we only get 18 summers with our kiddos. Are we going to let the pressure of trying to make it perfect sabotage that precious time? 💕

Air Fryer Pickle Chips

Crispy Air Fried Pickle ChipsServes 8

Ingredients:
3 cups dill pickle chips (or spears)
2 cups all-purpose flour
1 cup unsweet almond milk
2 cups panko breadcrumbs*
1 Tbsp ground cumin
2 tsp smoked paprika
2 tsp dried oregano
1/2 tsp ground black pepper
sea salt, to taste
*You can sub in gluten-free versions of flour and breadcrumbs if available

Directions:
1 .) Place pickles on a bed of paper towels and cover to absorb the excess liquid. Let it sit for about 10 minutes.
2.) In a medium bowl, whisk the flour and seasonings until well combined.
3.) Pour the cup of milk in another bowl and the breadcrumbs in a third separate bowl.
4.) Line a baking sheet with parchment paper to place the prepared pickles before frying.
5.) Dredge a pickle in the flour to coat it, then dip it in the milk and then in the breadcrumbs to coat. Continue with the rest of the pickles.
6.) Preheat your air fryer to 400F degrees. Spray a light coating of oil on the tops of the pickles and air fry for about 10 minutes or until golden and crispy. Enjoy!
