Crockpot Beef & Butternut Squash Stew

Busy night ahead?  Standing at the stove not an option?  😉

THis is why I LOVE crockpot meals.  All the heartiness of a home cooked meal – but it’s cooking without me!!

I can pull out the meat to start thawing in the fridge the night before, wake up and toss it all together while my coffee brews… and come home at the end of a long day to a kitchen smelling GOOD and a wholesome meal for my family to fill their bellies with.

This one is especially rewarding on a cold night because it’s warm AND healthy – for everyone!

INGREDIENTS

  • 1 tsp olive oil
  • 1½ lbs raw lean beef stew meat
  • 1 medium onion, chopped
  • 2 tomatoes, chopped
  • 2 bell peppers (green, red, or yellow), chopped
  • 4 cloves garlic, minced
  • 2 cups organic beef broth
  • 1 tsp celery salt
  • 1 tsp oregano
  • 1 tsp cayenne or black pepper
  • 2 cups cubed butternut squash

INSTRUCTIONS

  1. Add all ingredients into the crockpot
  2. Cook on high 4 hours.  Serve while hot!
