Garlic Avocado Dressing

Avo lovers, this will be one to keep in your recipe files for tasty homemade salad dressings.

This creamy salad dressing has a fresh zing from lemon juice and garlic but the flavor of rich avocado. It’s a healthier fat without the added sugars of most store-bought salad dressings, and it’s versatile enough to try on not only a great big bowl of salad, but also drizzled on sauteed fish or chicken, sandwiches or wraps, black beans and tomatoes, too.

For an even spicier version, add diced fresh jalapeno peppers or green chilies !!

We liked in on a fresh salad of spinach, cucumbers, tomatoes, carrots next to our smothered tilapia.  The kiddos poured some on top of their fish, too :-P.  


Avocado Dressing

Ingredients:
1/2 ripe medium avocado
2-3 tbsp minced garlic (depends on how garlicky you want it)
5 tbsp cup extra virgin olive oil
1/4 cup water
4 Tbsp. fresh lemon juice
chopped cilantro (to taste)
ground red pepper (to taste)
1/2 tsp himalayan salt

Preparation:
1.   Place all ingredients in a food processor; cover.
2.  Blend until smooth.  Serve immediately.
