21DFX Lunch – The Sweeter Sweet Potato

How do you like your sweet potatoes?  Baked fries?  Baked whole?  Roasted? 

I learned (by total accident) that if I baked my sweet potatoes for about 45 minutes to an hour (when they start oozing the bubbliness out the slit at the top LOL) then cut a slit at the top and put back in for another 45 minutes or so…  then turn the oven off but leave them in there a bit longer while the oven cools, that they’re soooo delightfully sweet on their own, I don’t miss the brown sugar or sweetener.  They really are so yummy. 

The cook time may seem like too long to wait, but since I cooked them at the beginning of the week and just keep them in my fridge to grab and eat whenever I want throughout my week, they’re completely convenient for a mid morning meal before workouts or lunch side dish with my protein of choice. 

Then, also, I saw a tip to try coconut  oil on my sweet potatoes, so I did.  And what?!  So good with the cinnamon.  Really.
