Cashew N Oat Hotcakes
Makes 10 servings, 2 hotcakes each
Sunday morning pancakes – who doesn’t love them? Since we have lived in our new home, my husband and I will often wake lazily on weekend mornings and take the time to whip up some fluffy pancakes. Honestly, the hubby has gotten better and more adventurous at trying different flavor combinations than I have, and the kids LOVE it.
Well, when 21 Day Fix Extreme rolled out, I thought I would have to suffer through a Sunday morning of smelling their pancake goodness while missing out for myself, BUT – NOT SO! Autumn and the Beachbody team deliver these delicious Oat N Cashew Hotcakes with fresh berries, and I’m all happy about how they turned out!
(Tip: When meal prepping during the fix, I made a dozen of these hotcakes and portioned 2 per baggie into the freezer. In the morning, I’d grab 2 and warm in toaster. If a C2C day, I’d eat them plain without the berries with my coffee & coconut oil, and 2 hardboiled eggs. GREAT on the go solution)!

So, here ya go – straight from my 21 Day Fix Extreme Eating Plan to you ;-). Yes, I love you guys!
Non-stick cooking spray
2 cups old-fashioned rolled oats
2 cups old-fashioned rolled oats
1/2 cup raw cashews
1 tsp ground cinnamon
1 dash sea salt or Himalayan salt
1 large egg
1 Tbsp coconut oil, melted
1 1/3 cup water
1 tsp pure vanilla extract
5 cups fresh berries
- Place oats, cashews, cinnamon and salt in a food processor or blender; pulse until coarsely ground.
- Add egg, oil, water, and extract; pulse until well blended. Batter will be thick, but if it is as thick as paste add 2 to 3 additional tablespoons of water.
- Heat medium nonstick skillet (or griddle), lightly coated with spray, over medium heat.
- Spoon about 1/4 cup batter into skillet for each hotcake; cook for 1 to 2 minutes or until bubbles form on top.
- Flip with spatula and cook for 30 seconds more.
- Repeat with remaining batter.
- Serve hotcakes topped evenly with berries.

Another tip! Try swapping out cashews for pecans for a little different taste! Yum!
